• Leftover Oatmeal Baobab Bread

What to do with leftover cooked oatmeal from breakfast that has been sitting in the fridge for a couple of days?  Sometimes we cook too much oatmeal and need something to use it in because it would be wasteful to just throw away.  Especially if it is steel cut oats, because it takes extra effort to cook up!  Try this powbab recipe of baobab bread that incorporates leftover oatmeal.  Works for seasoned oatmeal with cinnamon for instance or even fruits that were already mixed in. This bread comes out fluffy with great texture. powbab® organic baobab superfruit powder is high in fiber, potassium and electrolytes as well as antioxidants.

 

Leftover Oatmeal Baobab Bread Recipe

 

Makes 1 1/2 pound loaf.

 

Ingredients:

1 cup milk

2 eggs

2 tablespoons of powbab® organic baobab superfruit powder

1 tablespoon of pasture fed butter

3 cups bread flour

2 tablespoons of honey

1/4 teaspoon salt

3/4 teaspoon yeast

3/4 cup of cooked leftover oatmeal

 

Directions:

If using a bread machine, add ingredients according to bread machine directions. 

If making by hand, mix all ingredients together.  Knead dough into ball.  Place in a covered container to rise for at least 3 hours, until doubled, in a warm place.  Bake at 350 F degrees for about 40-45 minutes until golden brown.
