Vitamin C is a vitamin that is found in various foods and essential to a healthy diet. When measured in foods, it is known as ascorbic acid, and we should eat foods and fruits that contain Vitamin C. Vitamin C deficiency may result in a condition called scurvy. Consumption of Vitamin C prevents scurvy. Symptoms of scurvy include rash, muscle weakness, joint pain, tiredness, or tooth loss. This is why eating fruits and vegetables that contain Vitamin C is important, and Vitamin C supplements if we are not getting enough from our daily diet.
However, when consumers read the labels of foods or supplements to see how much Vitamin C they deliver, this is where confusion comes in. When the words 'ascorbic acid', is written on the label as the source of Vitamin C, this means it is a synthetic ingredient they are using to deliver the Vitamin C milligrams. General rule of thumb is when an ingredient ends with 'acid,' it is manufactured and is from a synthetic source. This can be for many other vitamins and minerals, not just Vitamin C. Most products on the market today that tout a 'Vitamin C' claim, use ascorbic acid for the Vitamin C source or another synthetic source. Other synthetic sources of Vitamin C include zinc ascorbate, calcium ascorbate, magnesium ascorbate or potassium ascorbate. These synthetic sources are significantly cheaper to manufacture than to use natural foods and ingredient sources to deliver Vitamin C; therefore, selling a cheaper product on the market. The question is, are you as a consumer aware?
The other issue is that ascorbic acid is typically made from corn derivatives. Most corn in the US is genetically modified (GMO). Unless the product or corn is verified by the Non-GMO Project Verified, in almost all cases, it is genetically modified. Genetic modification changes DNA structure, and this impacts our body when we consume it.
