• Baobab Energy Bars

Packed wtih superfoods and protein, these Baobab Energy Bars will be a treat for you and everyone around you! Got a fiber boost here with our powbab® baobab superfruit powder.  Also, these bars are vegan, gluten free, dairy free and refined sugar free. Great recipe developed by the talented nalos_glutenfree_sugarfree!

Makes 12 bars.

 

Baobab Energy Bars

Ingredients:

1/4 cup date paste
1/4 cup peanut butter 
1/4 cup coconut oil
1/4 cup maple syrup or raw honey
3-4 tablespoons cocoa powder/optional
1/4 teaspoon pink Himalayan salt
1/4 cup flaxseeds or flaxmeal
3 heaping tablespoons of chia seeds
1/2 cup mixed nuts
1/2 cup dried fruit
1 1/2 cup GF oats
3 tablespoons of superseeds (i.e., mix of buckwheat, hemp, chia, quinoa seeds)
1/2 cup unsweetened coconut
1/4 cup powbab® organic baobab superfruit powder
Unsweetened cocoa bar for dipping


Directions:

  1. Preheat oven to 300 degrees.
  2. Place oats and coconut in oven for 12-14 mins until toasted.
  3. Gently heat first 5 ingredients on stove top stirring until incorporated.
  4. In a large bowl combine rest of ingredients, add wet to dry and stir until well combined.
  5. Line a 9x9 baking pan with plastic wrap leaving extra on both sides to fold over the top. Spread mix in the pan evenly....fold over the plastic wrap to cover the top and press firmly with your hand or glass until compact.
  6. Place in freezer for 15 mins until firm but not hard....remove and cut into 12 bars.
  7. Melt chocolate in the microwave according to package directions, sweeten with honey and dip the bottom of each bar, place on parchment paper and drizzle with remaining chocolate. Use the back of a spoon to spread the chocolate, as it works best.
  8. Enjoy!
