• Blueberry Oatmeal Cookies

Blueberry oatmeal cookies are a yummy addition to breakfast or for dessert, and with our powbab® Dried Wild Blueberries, make this delicious recipe burst with polyphenols from the blue skins of wild blueberries.  Wild blueberries are higher in antioxidants than cultivated blueberries.  Thanks to @ModeratelyMe for creating this recipe on her blog!

 

Blueberry Oatmeal Cookies Recipe

Ingredients:

  • 2 tbsp ground flax seed
  • 5 tbsp water
  • 1 ½ cup oat flour
  • 1 cup oats
  • 1 tsp cinnamon
  • ½ tsp baking soda
  • ½ tsp baking powder
  • ½ tsp lemon zest
  • cup sugar optional
  • ½ cup peanut butter
  • ½ cup maple syrup
  • ¼ cup coconut oil
  • 1 cup powbab® Dried Wild Blueberries
Instructions
  • Preheat the oven to 350°. Line a baking sheet with parchment paper.
  • Make the flax egg by combining the flax seed and water together. Let sit for 5 minutes and stir often.
  • In a large bowl, combine the oat flour, oats, baking soda, baking powder, cinnamon, lemon zest and (optional) sugar. In a separate bowl, combine the peanut butter, melted coconut oil, maple syrup, and flax egg. Add the liquid mixture to the dry ingredients and fold together.
  • Add powbab® Dried Wild Blueberries to the batter and fold together.
  • Spoon 1-1½ sized cookies onto parchment paper. Bake for 20-23 minutes.
