• Baobab Fudgy Paleo Brownies

Fudgy goodness, paleo powbab baobab style. These brownies pictured are about to be put in the oven (not final product quite yet!).  All desserts have sugar, but these are sweetened by pitted medjool dates that will keep paleo eaters happy and sweet tooth satisfied.  Easy to mix up, and these are pretty fudgy and dense.  If you want a slightly fluffier brownie, then add 1/4 teaspoon of baking soda. 

 

Baobab Fudgy Paleo Brownies


Ingredients:

1/2 cup melted coconut oil

2 tablespoons of powbab® baobab superfruit powder

1/2 cup cocoa powder

2 oz unsweetened chocolate

1 cup of pitted medjool dates

2 large eggs, room temperature

1 teaspoon vanilla

1/4 cup coconut flour

1/2 teaspoon salt

1 teaspoon espresso powder (optional)

 

Directions:

  1. Preheat your oven to 350 degrees.  Oil your pan.
  2. In a food processor, pulse dates into puree, broken down evenly. 
  3. In a medium saucepan, combine coconut oil, cocoa powder, and unsweetened chocolate. Heat oven medium heat, whisking until mixture is smooth and no lumps remain.
  4. Take off the heat and stir in the pureed dates. This should cause the mixture to thicken. 
  5. Add in the eggs and vanilla and mix well. 
  6. Add in the powbab baobab powder, coconut flour, salt, and espresso powder. Mix until no dry pockets remain.  Add a little water as necessary, if too thick to stir.
  7. Pour into oiled pan and bake for about 20-25 minutes.
  8. Enjoy!  Store in fridge.
