• Blended Baobab Banana Bread

How delicious do these banana bread muffins look! So easy to whip up in your blender, pour out, and bake. Pack with extra fiber with our powbab® organic baobab superfruit powder. Blended Baobab Banana Bread Recipe

Ingredients:

1 large egg (room temperature preferred)

1/2 cup light brown sugar, packed

1/4 cup granulated sugar

1/4 cup liquid-state coconut oil

1/4 cup greek yogurt

2 teaspoons vanilla extract

1 cup mashed ripe bananas (about 2 large bananas)

2 tablespoons of powbab® organic baobab superfruit powder

1 cup whole wheat flour

1/2  teaspoon baking powder (non aluminum)

1/2  teaspoon baking soda

Handful of strawberries

 

Directions:

  1. Preheat oven to 350F. Line your 9×5-inch loaf pan with parchment paper; set aside.
    In a large bowl or your kitchen aid, add the egg (blend this first), sugars, coconut oil, greek yogurt, vanilla, and whisk to combine.
  2. Blend up those bananas and then add them to your mixture. Stir to incorporate.
  3. Add baobab fruit powder, flour, baking powder, baking soda, all together first and then fold in a little at a time.
  4. Pour batter into prepared pan or muffin tin.
  5. Blend or mash strawberries, top batter with strawberry mixture
  6. Bake for about 48 to 50 minutes or until the top starts to crack and is golden, check with toothpick to see if it comes out clean, which indicates it is done.
