• Blueberry Baobab Crumble

This is a sweet gluten free treat for you! Delicious for a snack or breakfast any time of the day.  Created by the talented nalos_glutenfree_sugarfree!

Makes 9 bars. 

 

Blueberry Baobab Crumble

Ingredients:

For jam:
1 cup of fresh or frozen berries
2-3 tablespoon raw honey or maple syrup
1 tablespoon water if using fresh berries or 1/2 tablespoon if using frozen
1 tablespoon chia seeds

Crust:
2 cups GF rolled oats
3 tablespoons flax meal
3 tablespoons chia seeds
3 tablespoons of powbab® organic baobab superfruit powder
1 teaspoon Saigon cinnamon
1/2 cup pecan pie nut butter
1/4 cup honey or maple syrup
1/4 cup coconut oil or butter
1/4 teaspoon vanilla extract

 

Directions:

  1. Place fruit, honey and water in a sauce pan and bring to a boil, smash berries, stir for 2 minutes until slightly thickened, turn of heat and stir in chia seeds. Set aside.
  2. Place first 5 ingredients in a bowl and stir to combine. In a sauce pan gently heat remaining ingredients just until oil or butter is melted, stir well, then ad to the dry ingredients, stirring well to combine.
  3. Line a 8x8 pan with parchment paper leaving excess to overlap ( this will allow you to lift the bars out easily when done) save 1/3 cup of the mix for the top, press into the bottom of the pan firmly coming up the sides just a little.
  4. Pour jam on top and spread, sprinkle reserved 1/3 cup oat mix on the top.
  5. Bake In a 300 degree preheated oven for 45 mins.
  6. Let cool for 15 mins, remove from pan and cut into 9 squares. Let it cool completely or enjoy warm with vanilla ice cream for a sweet treat.
