• Frozen Peanut Butter Cup Pie with Baobab

Frozen Peanut Butter Cup Pie with Baobab Recipe

Ingredients:

Crust
    1 cup of Medjool dates
    1 1/2 cups nuts (walnuts, pecans, almonds, cashews)
    1 tablespoon of powbab® organic baobab superfruit powder
    3 tablespoons unsweetened cocoa powder
    1 tablespoon coconut oil, melted


Peanut Butter Cup Middle

    1 cup smooth peanut butter
    1 cup coconut cream
    2-4 tablespoons maple syrup or honey

Chocolate Top

    3 oz dairy free dark chocolate
    1 tablespoon coconut milk
    1/4 cup crushed peanuts (optional)
    2 teaspoons of powbab® organic baobab superfruit powder for dusting

 

 

Directions:

  1. Crust
  2. Add the dates & nuts to a high powered blender or food processor and pulse until crumbly & sticky. Add the powbab® baobab fruit powder, cocoa powder and coconut oil and blend again until combined.
  3. Transfer the crust to an 8 inch round tart tin with a loose bottom. Push the crust into the sides and bottom in an even layer. Set aside while you make the filling.
  4. Peanut Butter Middle
  5. Add the peanut butter, coconut cream and sweetener to a mixing bowl. Whip together until smooth and combined. Pour the filling over the top of the crust and then transfer to the freezer while you prep the chocolate.
  6. Chocolate top
  7. Place the chocolate in a heat proof bowl that's large enough to sit over the top of a sauce pan.
  8. Add an inch of water to the sauce pan and bring to a simmer. Place bowl of chocolate into sauce pan with simmering water.
  9. Stir the chocolate as it melts. Stir in the coconut milk. Set aside chocolate mixture and cool.
  10. Pour cooled chocolate over peanut butter filling. Use a spoon to spread the chocolate around towards the sides. Sprinkle the powbab® baobab fruit powder and chopped peanuts over the top.
  11. Place in freezer for 40 minutes to firm up.
  12. Store this in the fridge or freezer. If left in freezer for over an hour, bring out for at least 15 minutes in room temperature before cutting.
