• Southern Baobab Collard Greens Recipe

Southern Baobab Collard Greens Recipe

 

Ingredients:

💥4 slices thick sliced bacon, sliced crosswise into 1/3-inch pieces (works with turkey or other cured meats, plus vegan options too, just add in extra oil to replace fat)

💥1 small or medium sweet onion, chopped

💥2 garlic cloves, minced

💥Optional: 2 teaspoons of sugar, if collard greens are slightly bitter (we suggest taste testing it.  If collard greens are sweet, then do not add sugar)

💥3/4 teaspoon sea salt

💥1/2 teaspoon freshly ground black pepper

💥1/4 cup of powbab® organic baobab superfruit powder

💥2 pounds collard greens, stems removed, sliced into 3-inch-wide strips (can substitute kale or chard)

💥1 cup chicken broth (or water)

 

 

Directions:

  1. Fry up the bacon in cast iron skillet. Then, with a spoon, remove some of the fat down to the amount you want to use in the dish.  We tend to leave a very small puddle, and drain the rest.
  2. Saute onions and garlic.
  3. In a separate bowl, combine chicken broth or water and powbab baobab powder. Mix until dissolved.
  4. Pour into skillet.
  5. Cook for 1 minute and stir.
  6. Put in chopped collard greens and combine.
  7. Season with sea salt, black pepper, and sugar if using it.
  8. Cook down until leaves change color and liquid is mostly evaporated.
  9. Serve and enjoy!
