• Vegan Fudgy Baobab Brownies

Vegan fudgy brownies that don't break the bank on sugar.  Sweetened with pitted medjool dates, these brownies give you a chocolate treat with no added baking soda or baking powder.  A difficult find of a recipe among brownies since most use baking soda or powder, which we limit/avoid due to aluminum content.  These are powered by powbab organic baobab powder for an extra shot of fiber.

 

 

Vegan Fudgy Baobab Brownies Recipe


Ingredients:

1/2 cup melted coconut oil

2 tablespoons of powbab® baobab superfruit powder

1/2 cup cocoa powder

2 oz unsweetened chocolate

1 cup of pitted soft medjool dates

1 teaspoon vanilla

1/4 cup coconut flour

1/2 teaspoon salt

1 teaspoon espresso powder (optional)

Flax eggs

2 tablespoons of ground flaxmeal

3 tablespoons of water

 

 

Directions:

  1. Preheat your oven to 350 degrees.  Oil your pan.
  2. Make flax eggs in a separate bowl by combining flaxmeal and water. Stir and set aside.
  3. In a food processor, pulse dates into puree, broken down evenly. Note: Add water if your dates are a bit dry and do not pulse well.
  4. In a medium saucepan, combine coconut oil, cocoa powder, and unsweetened chocolate. Heat oven medium heat, whisking until mixture is smooth and no lumps remain.
  5. Take off the heat and stir in the pureed dates. This should cause the mixture to thicken. 
  6. Add in the flax eggs and vanilla and mix well. 
  7. Add in the powbab baobab powder, coconut flour, salt, and espresso powder. Mix until no dry pockets remain.  Add a little water as necessary, if too thick to stir.
  8. Pour into oiled pan and bake for about 20-25 minutes.
  9. Enjoy!  Store in fridge.
