This not too sweet frosting recipe is perfect for our powbab® Baobab Lemon Sheet Cake Recipe that brings a full on, homemade cake to any party or celebration. Easy to make, and just as a warning, kids LOVE this frosting.
1 pound cream cheese (used 1/3 fat cream cheese), room temperature
3/4 stick unsalted butter, room temperature
3/4 pound confectioners' sugar (about 3.5 cups), sifted
2 teaspoons freshly grated lemon zest (from 1 lemon), plus 4 teaspoons juice
1 heaping tablespoon of powbab® organic baobab superfruit powder
Directions:Beat cream cheese, butter and sugar until smooth, about 5 minutes. Beat in powbab® baobab powder, lemon zest and lemon juice. Refrigerate in an airtight container up to 3 days. Stir until smooth before using. Works best if ingredients are slightly cool to room temperature.
