• Baobab Sheet Cake with Lemon Cream Cheese Frosting

This easy powbab® baobab sheet cake is great for any party or special occasion when a full on dessert is part of the celebration. Topped with a baobab lemon cream cheese frosting that is sure to delight.  Great for birthday parties, especially for kids.  Please note that this cake is a more dense, solid cake that is not too sweet, balanced with a refreshing citrusy flavor frosting.

 

powbab® Baobab Sheet Cake with Lemon Cream Cheese Frosting

Ingredients:

8 tablespoons unsalted butter, room temperature, plus more for pan

2 1/4 cups all-purpose flour (prefer unbleached), plus more for pan

1/4 cup powbab® organic baobab superfruit powder

1 teaspoon baking powder (prefer aluminum free)

1/2 teaspoon baking soda

3/4 teaspoon salt

3/4 cup sugar

3 large eggs, room temperature

1 teaspoon pure vanilla extract

1 1/4 cup whole milk (prefer pasture-fed), room temperature

Baobab Lemon Cream Cheese Frosting Recipe

1 pint of blueberries, for serving (optional)

 

Directions:

    1. Preheat oven to 350 degrees. Lightly butter a 9-by-13-inch baking pan; dust with flour. Use finger to get dusting even on buttered pan. Whisk together flour, powbab® baobab powder, baking powder, baking soda, and salt.  Set aside.
    2. The following ingredients work best at room temperature (butter, eggs, milk). Adhesion of these ingredients works best at room temperature.
    3. In mixer bowl, beat butter with 3/4 cup sugar on medium speed in a mixer fitted with the paddle attachment until light and fluffy, 5 minutes. Add eggs, one at a time, beating until combined after each addition and scraping down sides of bowl. Beat in vanilla. Reduce speed to low and add flour mixture in two batches, alternating with milk and beginning and ending with flour mixture.
    4. Transfer batter to prepared pan, smoothing top with spatula. Bake, rotating pan halfway through, until cake is golden and puffed and a tester inserted in center comes out clean, 22 to 25 minutes. Let cake cool completely in pan on a wire rack.
    5. Use an offset spatula to spread cake with frosting. Serve, optional with blueberries. Enjoy!
